  • 2 cans (10 oz each) Rotel diced tomatoes and green chilies
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 whole jalapeño pepper, quartered and thinly sliced
  • 1/4 teaspoon granulated sugar
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground cumin
  • 1/2 cup freshly chopped cilantro
  • Juice of 1/2 fresh lime

Instructions

  1. In a large mixing bowl, combine whole tomatoes with their juice and Rotel diced tomatoes with green chilies.
  2. Add chopped onion, minced garlic, and sliced jalapeño to the bowl.
  3. Sprinkle in sugar, salt, and ground cumin, and stir gently to combine.
  4. Fold in the chopped cilantro and squeeze in the lime juice. Mix again.
  5. Taste and adjust seasoning if needed by adding more lime juice, salt, or cilantro.
  6. Let the salsa sit for at least 30 minutes before serving to allow flavors to blend.
