1 lb large shrimp, peeled and deveined
1 cup panko breadcrumbs
2 tablespoons Cajun seasoning
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
2 large eggs, beaten
1/2 cup all-purpose flour
Salt and pepper, to taste
Vegetable oil, for frying
1/2 cup mayonnaise
2 tablespoons sriracha or hot sauce
1 teaspoon lime juice
1/2 teaspoon honey
Pinch of red pepper flakes
Instructions
Pat shrimp dry with paper towels and season lightly with salt and pepper.
In one bowl, combine flour with garlic powder and smoked paprika. In a second bowl, beat the eggs. In a third bowl, mix panko breadcrumbs with Cajun seasoning.
Dredge each shrimp in the flour mixture, then dip into beaten eggs, and finally coat with the seasoned breadcrumbs, pressing gently so crumbs stick.
Heat vegetable oil in a skillet over medium-high heat. Fry the shrimp in batches for 2–3 minutes per side until golden and crispy. Drain on paper towels.
In a small bowl, whisk together mayonnaise, sriracha, lime juice, honey, and red pepper flakes.
Serve the shrimp hot with the dipping sauce on the side or drizzled over the top.
