A rustic, savory galette with caramelized sweet potatoes, creamy feta, and fresh herbs.

1 1/2 cupsall-purpose flour
1/2 teaspoonsalt
1/2 cupunsalted butter, chilled and cubed
4–5tablespoons ice water
2medium sweet potatoes, thinly sliced
2 tablespoonsolive oil
1 tablespoonhoney
1/2 teaspoonsmoked paprika
1/2 cupcrumbled feta cheese
1 tablespoonfresh thyme leaves
1egg, beaten (for egg wash)
Instructions
Preheat oven to 375°F (190°C). In a food processor, combine flour and salt. Add chilled butter and pulse until mixture resembles coarse crumbs. Gradually add ice water until dough comes together.
Roll out dough into a 12-inch circle on a floured surface. Transfer to a parchment-lined baking sheet.
In a bowl, toss sweet potato slices with olive oil, honey, and smoked paprika. Arrange slices in overlapping layers on the dough, leaving a 2-inch border.
Sprinkle feta and thyme over the sweet potatoes. Fold edges of dough over the filling, pleating as needed.
Brush dough with egg wash. Bake for 30-35 minutes until crust is golden and sweet potatoes are tender.
