Indulge in Crispy Eggplant Burrata Towers with Truffle Mushroom Cream

  • 1large eggplant, sliced into1/2-inch rounds
  • 2burrata balls
  • 1 cupcremini mushrooms, sliced
  • 2 tablespoonstruffle oil
  • 1 cupheavy cream

Instructions

  1. Preheat oven to 400°F (200°C). Brush eggplant slices with olive oil, season, and place on a baking sheet. Bake until golden brown, about 20 minutes.
  2. In a saucepan, sauté mushrooms in olive oil over medium heat until softened. Add truffle oil and cream, simmering until thickened, about 10 minutes.
  3. Layer eggplant slices with pieces of burrata, finishing with the mushroom cream sauce. Serve immediately.
