  • 1 teaspoondried thyme
  • 1 teaspoonsalt
  • 1ripe avocado
  • 1 tablespoonlime juice
  • 1 teaspoonlime zest

Instructions

  1. Preheat the oven to 250°F (120°C).
  2. Arrange tomato slices on a baking sheet, drizzle with olive oil, and sprinkle with thyme and salt. Bake for 2 hours.
  3. In a blender, combine avocado, lime juice, and lime zest to make the swirl. Serve alongside the confited tomatoes.
