1sheet puff pastry, thawed
1 cupfresh strawberries, sliced
1 tbspbalsamic glaze
1/2 cupfeta cheese, crumbled
1/4 cupcream cheese, softened
1 tbsphoney
1 tspfresh thyme leaves
1egg, beaten (for egg wash)
1 tbspolive oil
Instructions
Preheat oven to 400°F (200°C). Roll out puff pastry on a parchment-lined baking sheet and prick all over with a fork. Brush with egg wash and bake for 15-20 minutes until golden and puffed.
While pastry bakes, whip feta, cream cheese, and honey until smooth. In a bowl, toss strawberries with balsamic glaze and olive oil.
Once pastry is cooled slightly, spread the whipped feta mixture evenly over the top. Arrange strawberries on top, drizzle with extra balsamic glaze if desired, and sprinkle with fresh thyme. Slice and serve.
