2large sweet potatoes, sliced into1/2-inch rounds
2 tablespoonsolive oil
1 teaspoonsalt
1 teaspoonblack pepper
1 teaspoonsmoked paprika
2 tablespoonshoney
1/2 cupcrumbled feta cheese
1 tablespoonfresh thyme leaves
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
Arrange rounds in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.
Remove from oven and drizzle with honey. Sprinkle with feta cheese and fresh thyme leaves before serving.
