Delightful Roasted Peach and Pistachio Salad with Honey Ricotta

A refreshing summer salad featuring sweet roasted peaches, crunchy pistachios, and creamy honey-infused ricotta.

  • 3ripe peaches, halved and pitted
  • 1/2 cuppistachios, shelled
  • 1 cupricotta cheese
  • 2 tablespoonshoney
  • 4 cupsmixed greens
  • 2 tablespoonsolive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Place peach halves on a baking sheet, drizzle with olive oil, and roast for 15 minutes.
  2. In a small bowl, mix ricotta cheese with honey until smooth.
  3. Arrange mixed greens on a platter. Top with roasted peaches, pistachios, and dollops of honey ricotta. Season with salt and pepper before serving.
