2large tomatoes, diced
1cucumber, peeled and diced
1red onion, thinly sliced
1green bell pepper, diced
200gfeta cheese, crumbled
1/4 cupKalamata olives, pitted and halved
2 tbspextra virgin olive oil
1 tbsplemon juice
1 tspdried oregano
Salt and black pepper to taste
Fresh mint leaves for garnish
Instructions
In a bowl, combine tomatoes, cucumber, red onion, and bell pepper. Toss gently.
In a separate small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
Layer the vegetable mixture, feta cheese, and olives in individual serving rings or glasses, pressing lightly between layers.
Drizzle the dressing over each tower and garnish with fresh mint leaves before serving.
