200gpasta of your choice
1ripe avocado
1/2 cuppistachios
2 cupsfresh basil leaves
2cloves garlic
1/4 cupgrated Parmesan cheese
1/4 cupextra virgin olive oil
Juice of1lemon
Salt and pepper to taste
2 tablespoonsspicy chili crisp or chili oil
Instructions
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a food processor, blend together avocado, pistachios, basil, garlic, Parmesan cheese, olive oil, and lemon juice until smooth. Season with salt and pepper.
Toss the cooked pasta with the avocado pesto until well coated. Serve with a drizzle of spicy chili crisp on top.
