Sweet Potato Crudo with Black Garlic Lime Vinaigrette Recipe

  • 2cloves black garlic, minced
  • 1lime, juiced and zested
  • 2 tbspolive oil

  • 1/4 tspblack pepper
  • 1 tbspfresh cilantro, chopped
  • 1 tbsptoasted sesame seeds

Instructions

  1. Using a mandoline or sharp knife, slice sweet potatoes into paper-thin rounds. Arrange on a serving platter.
  2. In a small bowl, whisk together black garlic, lime juice, lime zest, olive oil, honey, salt, and pepper to make the vinaigrette.
  3. Drizzle vinaigrette over sweet potato slices. Garnish with cilantro and sesame seeds. Serve immediately.
