Sweet Potato & Goat Cheese Crostini – A Gourmet Appetizer Delight

Layers of comfort with a gourmet twist. Crisp toasted baguette slices hold a creamy goat cheese spread and caramelized sweet potato topping.

  • 1small sweet potato, peeled and thinly sliced
  • 1French baguette, sliced into1/2-inch pieces
  • 4 ozgoat cheese, softened
  • 2 tbspolive oil
  • 1 tbsphoney
  • 1 tspfresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F. Toss sweet potato slices with 1 tbsp olive oil, salt, and pepper. Roast on a baking sheet for 20 minutes until tender.
  2. Brush baguette slices with remaining olive oil and toast in the oven for 5-7 minutes until golden.
  3. Spread goat cheese on each crostini, top with roasted sweet potato slices, drizzle with honey, and sprinkle with fresh thyme.
