  • 2medium zucchini, sliced lengthwise
  • 2ears of corn, husked
  • 1/4 cupolive oil

Instructions

  1. Preheat a grill to medium-high heat.
  2. Brush the zucchini slices and corn with olive oil and grill for 10 minutes, turning occasionally, until tender and slightly charred.
  3. Cut the corn kernels off the cob and mix with grilled zucchini in a bowl. Serve with lime dressing.
