A delicious and healthy dish featuring sweet potatoes stuffed with a creamy spinach and ricotta filling, topped with a fresh herb drizzle.

4large sweet potatoes
1 cupricotta cheese
2 cupsfresh spinach, chopped
1 tablespoonolive oil
Salt and pepper to taste
1/4 cupfresh basil leaves
1/4 cupfresh parsley leaves
1garlic clove
Juice of1lemon
Instructions
Preheat the oven to 400°F (200°C). Pierce each sweet potato a few times with a fork and place on a baking sheet. Bake for 30-35 minutes or until tender.
In a medium bowl, combine ricotta, chopped spinach, olive oil, salt, and pepper. Mix until well combined.
In a blender, combine basil, parsley, garlic, lemon juice, and a pinch of salt. Blend until smooth to make the herb drizzle. Once the potatoes are done, cut open, stuff with the ricotta mixture, and finish with a drizzle of herb sauce before serving.
