This creamy hummus combines roasted zucchini with traditional ingredients for a delicious, unique twist on a classic dip.

2medium zucchinis, sliced
1can chickpeas, drained and rinsed
1/4 cuptahini
2cloves garlic, minced
Juice of1lemon
2 tablespoonsolive oil
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C). Arrange zucchini slices on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes.
In a food processor, combine roasted zucchini, chickpeas, tahini, garlic, lemon juice, and olive oil. Blend until smooth.
Adjust seasoning with additional salt and pepper as needed. Serve chilled or at room temperature.
