2medium sweet potatoes, peeled and sliced
1baguette, sliced into1/2inch rounds
4 ozcrumbled blue cheese
Instructions
Preheat the oven to 400°F (200°C). Arrange sweet potato slices on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes or until tender.
Place baguette slices on another baking sheet and toast in the oven for about 5 minutes until slightly golden.
Top each crostini with a sweet potato slice and a sprinkle of blue cheese. Return to the oven for 5 more minutes until the cheese is just melted.
