Irresistible Sun-Dried Tomato Spinach and Ricotta Grilled Cheese Recipe

  • 8slices whole-grain bread
  • 4 tablespoonssun-dried tomato pesto
  • 1 cupfresh spinach leaves
  • 1 cupricotta cheese
  • 1 cupshredded mozzarella cheese
  • Butter, for grilling

Instructions

  1. Spread 1 tablespoon of sun-dried tomato pesto on one side of each slice of bread.
  2. Layer spinach, ricotta, and mozzarella cheese onto the pesto side of 4 bread slices, then top with the remaining slices, pesto side down.
  3. In a skillet over medium heat, melt enough butter to coat the pan. Grill each sandwich until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
