8slices whole-grain bread
4 tablespoonssun-dried tomato pesto
1 cupfresh spinach leaves
1 cupricotta cheese
1 cupshredded mozzarella cheese
Butter, for grilling
Instructions
Spread 1 tablespoon of sun-dried tomato pesto on one side of each slice of bread.
Layer spinach, ricotta, and mozzarella cheese onto the pesto side of 4 bread slices, then top with the remaining slices, pesto side down.
In a skillet over medium heat, melt enough butter to coat the pan. Grill each sandwich until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
