  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss the cherry tomatoes, zucchini, and red bell pepper with olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes until vegetables are tender.
