  • 1 cup Parmesan cheese (freshly grated)
  • 1 cup panko breadcrumbs
  • 2 eggs
  • 4 cloves garlic (fresh, minced)
  • 1 teaspoon garlic powder
  • 1 yellow onion (finely chopped)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper or grease a loaf pan.
  2. In a large bowl, combine ground chicken, Parmesan cheese, panko breadcrumbs, eggs, garlic, and garlic powder.
  3. Add the chopped onion, Italian seasoning, salt, and pepper. Mix until just combined without overmixing.
  4. Shape the mixture into a 9×4 inch loaf on the prepared sheet or press into a loaf pan.
  5. Drizzle olive oil over the loaf, smooth the surface, and bake for 45–50 minutes until internal temp reaches 165°F.
  6. Let the meatloaf rest for 10 minutes before slicing. Garnish with extra Parmesan or parsley if desired.
