Peanut Butter Chocolate Cupcakes – Easy Dessert

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/4 cup milk
  • 1 cup chocolate chips (melted)
  • 12 mini peanut butter cups

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add vegetable oil, buttermilk, eggs, and vanilla extract. Mix until smooth.
  4. Pour batter into cupcake liners, filling about 2/3 full.
  5. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool completely.
  6. In a bowl, beat together creamy peanut butter, powdered sugar, and milk until fluffy.
  7. Cut a small hole in the center of each cooled cupcake and fill with the peanut butter mixture.
  8. Pipe more peanut butter frosting on top and drizzle with melted chocolate.
  9. Garnish each cupcake with a mini peanut butter cup.
