Savory Parmesan Ice Cream Sandwiches with Basil-Ricotta Gelato

A unique twist on ice cream sandwiches featuring savory parmesan cookies and a creamy basil-ricotta gelato filling.

  • 1 cupgrated parmesan cheese
  • 1/2 cupunsalted butter, softened
  • 1 cupall-purpose flour
  • 1/4 teaspoonsalt
  • 1 cupricotta cheese
  • 1/4 cupfresh basil, finely chopped
  • 1 tablespoonhoney
  • 1/4 teaspoonblack pepper

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix parmesan cheese, butter, flour, and salt until a dough forms. Roll into small balls and flatten into cookies on the baking sheet.
  3. Bake for 12-15 minutes until golden. Let cool completely.
  4. Combine ricotta, basil, honey, and black pepper in a bowl. Chill for 30 minutes.
  5. Spread basil-ricotta mixture between two parmesan cookies to form sandwiches. Freeze for 1 hour before serving.
