Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together butter and sugar in a large mixing bowl until light and fluffy.
  3. Add the egg, lemon zest, lemon juice, and vanilla extract. Beat until fully combined.
