1 lb smoked sausage, sliced into thick rounds
3 large white sweet potatoes, peeled and diced into cubes
3 tablespoons olive oil
3 tablespoons honey
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
Preheat oven to 400°F (200°C). Toss diced white sweet potatoes with olive oil, thyme, rosemary, paprika, salt, and pepper.
Spread evenly on a parchment-lined baking sheet and roast for 20–25 minutes until tender and slightly golden.
In a skillet over medium heat, brown sausage slices until caramelized on the edges.
Add honey and garlic to the skillet, stirring until sausage is coated and glaze thickens slightly.
Combine the roasted white sweet potatoes with the glazed sausage in the skillet, tossing everything together.
