Balsamic Chicken with Strawberry Basil Relish

This balsamic chicken is perfectly tangy and sweet, topped with a fresh strawberry basil relish. It’s a quick and healthy weeknight dinner.

  • 1.5 lbs boneless skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the Strawberry Basil Relish:
  • 1 cup fresh strawberries, diced
  • 2 tbsp fresh basil, chopped
  • 1 tbsp balsamic vinegar
  • 1 tsp honey

Instructions

  1. In a bowl, whisk together balsamic vinegar, olive oil, honey, garlic, salt, and pepper.
  2. Add chicken breasts and marinate for at least 15 minutes (or up to 2 hours in the fridge).
  3. Grill or pan-sear chicken over medium-high heat for 5-7 minutes per side, until cooked through (internal temp 165°F).
  4. While chicken cooks, make the relish: combine strawberries, basil, balsamic vinegar, and honey in a small bowl.
  5. Let chicken rest for 5 minutes, then top with strawberry basil relish and serve.

Notes

For best flavor, use a good quality balsamic vinegar. This dish pairs well with a side of steamed vegetables or rice.
