Bruschetta Chicken

Juicy baked chicken breasts topped with fresh tomato basil bruschetta and melted mozzarella – a quick and flavorful dinner.

  • For the Chicken:
  • 2 large boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the Bruschetta Topping:
  • 3 Roma tomatoes, diced
  • 2 tbsp fresh basil, chopped
  • 1 clove garlic, minced
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • For Assembly:
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. In a small bowl, mix olive oil, oregano, garlic powder, salt, and pepper. Brush mixture over both sides of chicken breasts.
  3. Place chicken in prepared baking dish and bake for 20-25 minutes, or until internal temperature reaches 165°F (74°C).
  4. While chicken bakes, prepare bruschetta topping: combine diced tomatoes, basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper in a bowl. Stir gently.
  5. Remove chicken from oven. Spoon bruschetta mixture evenly over each chicken breast, then top with shredded mozzarella.
  6. Return to oven and bake for an additional 5-7 minutes, until cheese is melted and bubbly.
  7. Garnish with fresh basil and serve immediately.

Notes

For extra flavor, marinate the chicken in the olive oil mixture for 30 minutes before baking. Serve with pasta or a side salad.
