Chicken Piccata

This chicken piccata is a classic Italian-American dish featuring tender chicken breasts in a tangy lemon-butter sauce with capers. Quick, easy, and bursting with flavor!

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  2. Season both sides of chicken with salt and pepper.
  3. Dredge chicken in flour, shaking off excess.
  4. Heat olive oil in a large skillet over medium-high heat.
  5. Cook chicken for 3-4 minutes per side until golden and cooked through. Remove and set aside.
  6. In the same skillet, melt butter. Add chicken broth, lemon juice, and capers. Bring to a simmer, scraping up browned bits.
  7. Return chicken to skillet and cook for 2 minutes, spooning sauce over the top.
  8. Garnish with parsley and serve immediately.

Notes

For a richer sauce, add 2 tablespoons of heavy cream along with the broth. Serve with pasta, rice, or crusty bread.
