Crispy Flatbread with Goat Cheese, Cranberries & Toasted Pecans

  • For the Flatbread:
  • 2 rectangular flatbreads or naan
  • 2 tbsp olive oil
  • 1 clove garlic, halved
  • 1/4 tsp kosher salt
  • For the Topping:
  • 4 oz goat cheese, softened
  • 1/3 cup dried cranberries
  • 1/3 cup pecans, toasted and chopped
  • 2 tbsp honey
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat oven to 400°F.
  2. Place flatbreads on a baking sheet. Brush with olive oil and rub with cut garlic. Sprinkle with salt.
  3. Bake flatbreads for 5 minutes until lightly crisp.
  4. Spread softened goat cheese over the flatbreads.
  5. Sprinkle cranberries and toasted pecans over the cheese.
  6. Drizzle with honey.
  7. Return to oven for 3 minutes until cheese is warm.
  8. Garnish with fresh thyme leaves. Slice and serve.

Notes

To toast pecans, place in a dry skillet over medium heat, stirring frequently until fragrant, about 3-4 minutes.
