Crispy Gruyère Chickpeas & Spinach with Lemon

A quick and flavorful vegetarian dish featuring crispy chickpeas, sautéed spinach, and melted Gruyère cheese, brightened with lemon.

  • For the Crispy Chickpeas:
  • 1 can (15 oz) chickpeas, drained, rinsed, and patted dry
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • For the Spinach and Assembly:
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 5 oz fresh spinach
  • 1/2 cup grated Gruyère cheese
  • 1 lemon, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chickpeas with 1 tbsp olive oil, garlic powder, and smoked paprika. Spread on a baking sheet and roast for 20-25 minutes until crispy.
  3. While chickpeas roast, heat 2 tbsp olive oil in a large skillet over medium heat. Add minced garlic and cook for 30 seconds.
  4. Add spinach to the skillet and cook, stirring, until wilted, about 2-3 minutes.
  5. Season spinach with salt and pepper, then sprinkle Gruyère cheese over the top. Cover and let cheese melt for 1 minute.
  6. Remove from heat, squeeze lemon juice over the spinach, and top with crispy chickpeas. Serve immediately.

Notes

For extra crunch, you can broil the chickpeas for the last 2 minutes. Substitute Gruyère with Swiss or fontina if desired.
