Crispy Roasted Sweet Potato Wedges with Feta and Hot Honey Drizzle

Crispy roasted sweet potato wedges topped with crumbled feta and a spicy-sweet hot honey drizzle.

  • For the Roasted Sweet Potatoes:
  • 3 large sweet potatoes, scrubbed and cut into 1-inch thick wedges
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • For the Hot Honey Drizzle:
  • 1/4 cup honey
  • 1/2 tsp red pepper flakes
  • For Serving:
  • 1/2 cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato wedges with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  3. Arrange the wedges in a single layer on the prepared baking sheet, ensuring they are not touching.
  4. Roast for 25-30 minutes, flipping halfway through, until the wedges are crispy and tender.
  5. While the potatoes roast, make the hot honey: In a small saucepan over low heat, warm the honey and red pepper flakes for 3-4 minutes, stirring occasionally. Remove from heat and let steep.
  6. Transfer the roasted wedges to a serving platter. Sprinkle with crumbled feta and chopped parsley. Drizzle with the hot honey. Serve immediately.

Notes

For extra crispiness, soak the cut sweet potato wedges in cold water for 30 minutes, then pat very dry before seasoning and roasting.
