Sheet Pan Crispy Shrimp Bites with High-Protein Cajun Dipping Crema

The bites format that surprised everyone this week! Crispy panko-coated shrimp roasted on one sheet pan until golden all over, served with a thick bold Cajun high-protein dipping crema. No frying needed. The snack that turns into dinner.

  • The Sheet Pan: 1 1/2 lbs large shrimp (peeled, deveined, patted dry)
  • 2 tbsp olive oil
  • 1/2 cup panko breadcrumbs
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • salt
  • cooking spray
  • The High-Protein Cajun Dipping Crema: 1/2 cup Greek yogurt (0% fat)
  • 1 tbsp hot sauce
  • 1 tsp Cajun seasoning
  • 1 tsp honey
  • juice of 1/2 lemon
  • 1 garlic clove (minced)
  • pinch of salt
  • whisked smooth
  • The Garnish: sliced green onions
  • lemon wedges
  • pinch of smoked paprika

Instructions

  1. Preheat oven to 425F (220C).
  2. Toss shrimp in olive oil, then press firmly into a mixture of panko, Cajun seasoning, garlic powder, smoked paprika, and salt. Spread on a lined sheet pan with space between each shrimp.
  3. Spray generously with cooking spray.
  4. Bake 10 to 12 minutes until the panko crust is golden and the shrimp are cooked through. No frying needed.
  5. Whisk Greek yogurt, hot sauce, Cajun seasoning, honey, lemon juice, garlic, and salt until smooth.
  6. Plate the shrimp bites with the Cajun crema on the side. Garnish with green onions, smoked paprika, and lemon wedges.
