Crispy Smashed Butter Beans with Whipped Feta and Chili Crisp Honey

Crispy, golden smashed butter beans served over creamy whipped feta and drizzled with a spicy-sweet chili crisp honey. A perfect appetizer or side dish.

  • 2 cans (15 oz each) butter beans (lima beans), drained and rinsed
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • For the Whipped Feta:
  • 4 oz feta cheese, crumbled
  • 2 oz cream cheese, softened
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • For the Chili Crisp Honey:
  • 3 tbsp honey
  • 1 tbsp chili crisp (or more to taste)
  • 1 tsp sesame seeds (optional)
  • For Garnish:
  • 2 tbsp fresh parsley or cilantro, chopped
  • Flaky sea salt

Instructions

  1. 1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. 2. Pat the butter beans dry with a paper towel. Spread them on the baking sheet in a single layer. Use a fork or the bottom of a glass to gently smash each bean.
  3. 3. Drizzle with olive oil, garlic powder, and salt. Gently toss to coat.
  4. 4. Roast for 20–25 minutes, flipping halfway through, until golden and crispy.
  5. 5. While beans roast, make the whipped feta: In a food processor, combine feta, cream cheese, yogurt, garlic, and olive oil. Blend until smooth and creamy. Season with salt and pepper.
  6. 6. Make the chili crisp honey: In a small bowl, whisk together honey and chili crisp. Stir in sesame seeds if using.
  7. 7. To serve, spread whipped feta onto a plate or shallow bowl. Top with crispy butter beans. Drizzle with chili crisp honey and garnish with parsley and flaky sea salt.

Notes

You can adjust the amount of chili crisp to your heat preference. The whipped feta can be made a day ahead and refrigerated; let it come to room temperature before serving. For extra crunch, broil the beans for the last 2 minutes.
