Crispy Stuffed Salmon with Spinach, Whipped Feta & Golden Hot Honey Crust

A crispy, golden-crusted salmon fillet stuffed with a creamy spinach and whipped feta filling, drizzled with hot honey for a sweet and spicy finish.

  • 4 (6-ounce) salmon fillets, skin on
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • 4 ounces cream cheese, softened
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sour cream
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove, minced
  • 2 cups fresh baby spinach, roughly chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup chopped fresh dill
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup honey
  • 1 teaspoon red pepper flakes
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Make a horizontal slit along the side of each salmon fillet to create a pocket, being careful not to cut all the way through. Season inside and out with salt and pepper.
  3. In a medium bowl, combine cream cheese, feta, sour cream, lemon juice, and garlic. Mix until smooth. Fold in spinach, sun-dried tomatoes, and dill.
  4. Stuff each salmon pocket with the spinach-feta mixture, dividing evenly. Press gently to close.
  5. In a small bowl, mix panko, Parmesan, and melted butter. Press this mixture evenly onto the top of each salmon fillet.
  6. Place salmon on the prepared baking sheet. Bake for 15–18 minutes, until crust is golden and salmon is cooked through (internal temperature 145°F).
  7. While salmon bakes, make the hot honey: In a small saucepan, combine honey, red pepper flakes, and cayenne. Warm over low heat for 2–3 minutes. Remove from heat.
  8. Drizzle hot honey over baked salmon before serving.

Notes

For extra crispiness, broil the salmon for the last 1–2 minutes of cooking, watching carefully to avoid burning. Adjust the spice level of the hot honey by increasing or decreasing the red pepper flakes.
