  • 1/4 teaspoon garlic powder
  • Vegetable oil, for frying
  • For the Whipped Feta:
  • 4 oz feta cheese, crumbled
  • 2 oz cream cheese, softened
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • For the Hot Honey:
  • 1/4 cup honey
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Prepare the fritter mixture: In a large bowl, combine the grated sweet potato, scallions, flour, egg, salt, pepper, and garlic powder. Mix until well combined.
  2. Cook the fritters: Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Scoop about 1/4 cup of the mixture per fritter into the hot oil, flattening slightly. Cook for 3-4 minutes per side, until golden brown and crispy. Drain on paper towels.
  3. Make the whipped feta: In a food processor, combine the feta, cream cheese, Greek yogurt, olive oil, and lemon juice. Blend until smooth and creamy.
  4. Prepare the hot honey: In a small saucepan, warm the honey and red pepper flakes over low heat for 2-3 minutes. Remove from heat and let steep.
  5. Serve: Plate the fritters with a dollop of whipped feta and a drizzle of hot honey.

Notes

For extra crispiness, squeeze excess moisture from the grated sweet potatoes before mixing. The hot honey can be made ahead and stored at room temperature.
