French Onion Meatloaf with Melted Swiss Cheese – Slow Cooker Style

A savory meatloaf with caramelized onions and melted Swiss cheese, cooked low and slow in a crockpot for ultimate comfort.

  • For the Caramelized Onions:
  • 34 large sweet onions, sliced
  • 4 tablespoons salted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon coarse black pepper
  • 1 teaspoon granulated sugar
  • For the Meatloaf:
  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1 packet onion soup mix
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Topping:
  • 68 slices Swiss cheese (or Gruyère)

Instructions

  1. Caramelize the onions: In a large skillet over medium heat, melt butter with olive oil. Add sliced onions, salt, pepper, and sugar. Cook, stirring occasionally, for 20–25 minutes until deeply golden brown and soft. Set aside.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion soup mix, garlic powder, thyme, salt, and pepper. Mix until just combined.
  3. Shape the meat mixture into a loaf shape that will fit in your slow cooker.
  4. Place the meatloaf in the slow cooker. Top with the caramelized onions.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until meatloaf is cooked through.
  6. About 15 minutes before serving, lay Swiss cheese slices over the top of the meatloaf. Cover and let melt.
  7. Carefully lift the meatloaf out of the slow cooker (use foil sling if needed) and serve warm.
