Garlic Cajun Chicken with Cheesy Mozzarella Linguine

A spicy and cheesy pasta dish featuring Cajun-seasoned chicken and mozzarella linguine.

  • 1.25 lbs boneless, skinless chicken breasts, thinly sliced
  • 12 oz linguine pasta
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 1 tbsp Cajun seasoning (plus more to taste)
  • ½ tsp garlic powder
  • ½ tsp smoked paprika

Instructions

  1. Cook linguine according to package directions. Drain and set aside.
  2. Season chicken slices with Cajun seasoning, garlic powder, and smoked paprika.
  3. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 3-4 minutes per side. Remove and set aside.
  4. Reduce heat to medium. Add remaining butter to the skillet. Stir in cooked pasta and toss to coat.
  5. Add chicken back to the skillet and toss everything together. Add more Cajun seasoning to taste.
  6. Serve immediately with shredded mozzarella on top.
