Golden Crispy Chicken with Creamy Feta, Roasted Tomatoes & Lemon Basil Drizzle

Juicy, crispy chicken topped with a creamy feta spread, sweet roasted tomatoes, and a bright lemon basil drizzle.

  • For the Golden Crispy Chicken:
  • 2 large boneless skinless chicken breasts (pounded to even thickness)
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg
  • 2 tbsp olive oil
  • For the Roasted Tomatoes:
  • 1 cup cherry tomatoes
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • For the Creamy Feta Spread:
  • 4 oz feta cheese, crumbled
  • 2 oz cream cheese, softened
  • 2 tbsp plain Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • For the Lemon Basil Drizzle:
  • 1/4 cup fresh basil leaves
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 small garlic clove
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until softened and blistered.
  2. In a shallow bowl, combine panko, Parmesan, garlic powder, paprika, salt, and pepper. In another bowl, beat the egg.
  3. Pat chicken breasts dry. Dip each breast in the egg, then coat thoroughly in the panko mixture.
  4. Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook for 3-4 minutes per side until golden brown. Transfer skillet to the oven and bake for 10-12 minutes, or until chicken is cooked through (165°F internal temperature).
  5. While chicken cooks, prepare the feta spread: In a bowl, mash together feta, cream cheese, Greek yogurt, lemon juice, and oregano until smooth.
  6. Prepare the lemon basil drizzle: In a small food processor or blender, combine basil, 2 tbsp olive oil, 1 tbsp lemon juice, garlic, salt, and pepper. Blend until smooth.
  7. To serve, spread the creamy feta on a plate. Top with the crispy chicken breast. Add the roasted tomatoes alongside. Drizzle everything generously with the lemon basil sauce.

Notes

For a lighter version, you can bake the breaded chicken entirely in the oven at 400°F for 20-25 minutes, flipping halfway. The feta spread can be made a day ahead.
