Greek-Style Beef Meatballs with Creamy Sun-Dried Tomato Tzatziki

  • For the Meatballs:
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Tzatziki:
  • 1 cup Greek yogurt
  • 1/2 cup diced sun-dried tomatoes (rehydrated if needed)
  • 1/2 cucumber, grated and squeezed dry
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, onion, garlic, egg, oregano, salt, and pepper. Mix until just combined.
  3. Form mixture into 1.5-inch meatballs and place on the prepared baking sheet.
  4. Bake for 15-18 minutes, or until cooked through and browned.
  5. Meanwhile, prepare the tzatziki: In a medium bowl, combine Greek yogurt, sun-dried tomatoes, grated cucumber, lemon juice, olive oil, and garlic. Season with salt and pepper to taste.
  6. Serve meatballs warm with the creamy sun-dried tomato tzatziki on the side.

Notes

For a lighter version, use lean ground beef or ground turkey. Sun-dried tomatoes can be substituted with roasted red peppers if desired.
