Grilled Halloumi and Tomato Salad for Summer Bliss

A refreshing summer salad featuring grilled halloumi cheese and ripe tomatoes, perfect for warm weather.

  • For the Grilled Halloumi & Tomatoes:
  • 8 oz Halloumi cheese, sliced into 1/2-inch thick rectangles
  • 1 lb heirloom tomatoes or cherry tomatoes, halved or sliced into thick wedges
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. Brush the halloumi slices and tomato pieces with olive oil and sprinkle with dried oregano.
  3. Grill the halloumi for 2-3 minutes per side until golden brown and softened.
  4. Grill the tomatoes for 1-2 minutes per side until slightly charred.
  5. Arrange the grilled halloumi and tomatoes on a serving platter.
  6. Drizzle with additional olive oil and season with salt and pepper to taste.
  7. Serve immediately as a salad or appetizer.

Notes

This salad pairs well with a light vinaigrette or fresh herbs like basil or mint.
