  • 1 block (8.8 oz) halloumi cheese, sliced into 1/2-inch thick slabs
  • 1 large sweet potato, peeled and diced into 1/2-inch cubes
  • 1 medium zucchini, sliced into half-moons
  • 1 red bell pepper, cut into large chunks

Instructions

  1. Preheat the grill to medium-high heat.
  2. Toss the sweet potato cubes, zucchini slices, and red bell pepper chunks with olive oil, salt, and pepper.
  3. Grill the vegetables in a grill basket or on skewers for about 10-12 minutes, turning occasionally, until tender and charred.
  4. Grill the halloumi slices for 2-3 minutes per side, until golden grill marks appear and cheese is softened.
