Homemade Italian Wedding Soup

This hearty and comforting Italian Wedding Soup is filled with tiny meatballs, tender greens, and acini di pepe pasta in a flavorful broth. Perfect for a cozy dinner.

  • For the Meatballs:
  • 1 pound ground pork
  • 1/2 pound ground beef
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Soup:
  • 8 cups chicken broth
  • 1 cup water
  • 1 cup acini di pepe pasta (or other small pasta)
  • 2 cups fresh spinach, roughly chopped
  • 1/2 cup grated Parmesan cheese (for serving)
  • Salt and pepper to taste

Instructions

  1. Make the meatballs: In a large bowl, combine the ground pork, ground beef, Parmesan cheese, breadcrumbs, egg, garlic, parsley, salt, and pepper. Mix until just combined.
  2. Roll the mixture into small, 1-inch meatballs and place them on a baking sheet.
  3. In a large pot, bring the chicken broth and water to a boil over medium-high heat.
  4. Carefully drop the meatballs into the boiling broth. Reduce heat to medium and cook for 10 minutes, until meatballs are cooked through.
  5. Add the pasta to the pot and cook according to package directions, about 8-10 minutes, until al dente.
  6. Stir in the chopped spinach and cook for 2 minutes, until wilted.
  7. Taste and adjust seasoning with salt and pepper.
  8. Ladle the soup into bowls and top each with a sprinkle of Parmesan cheese. Serve hot.

Notes

For a richer flavor, use homemade chicken broth. You can substitute ground turkey for the pork and beef if desired. The soup can be stored in the refrigerator for up to 3 days.
