Honey Garlic Glazed Salmon with Roasted Potatoes & Cheesy Asparagus

A complete, flavorful sheet pan dinner featuring sweet and savory glazed salmon, crispy roasted potatoes, and tender asparagus with a cheesy topping.

  • For the Roasted Potatoes:
  • 1 lb baby Yukon Gold potatoes (halved)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • For the Honey Garlic Glaze:
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • For the Salmon:
  • 4 (6 oz) salmon fillets, skin-on or skinless
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • For the Cheesy Asparagus:
  • 1 bunch asparagus, tough ends trimmed
  • 1 tbsp olive oil
  • 1/4 tsp garlic powder
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Prepare Potatoes: Toss halved potatoes with 2 tbsp olive oil, oregano, and 1/2 tsp salt. Arrange on one side of the baking sheet. Roast for 15 minutes.
  3. Make Glaze: While potatoes roast, whisk together honey, minced garlic, soy sauce, rice vinegar, and grated ginger in a small bowl. Set aside.
  4. Prepare Salmon: Pat salmon fillets dry. Season with salt and pepper. After potatoes have roasted 15 minutes, move them to one half of the pan. Place salmon fillets on the other half. Brush the salmon with the honey garlic glaze, reserving some for later.
  5. Add Asparagus: In a bowl, toss trimmed asparagus with 1 tbsp olive oil and garlic powder. Add asparagus to the pan around the salmon and potatoes.
  6. Cook: Return pan to oven and roast for 12-15 minutes, or until salmon is cooked through and flakes easily.
  7. Add Cheese: Remove pan from oven. Sprinkle mozzarella and Parmesan cheese over the asparagus. Switch oven to broil. Return pan to oven for 1-2 minutes until cheese is melted and bubbly.
  8. Serve: Drizzle remaining glaze over the salmon. Garnish with fresh parsley if desired. Serve immediately.

Notes

For crispier potatoes, ensure they are in a single layer and not overcrowded. You can substitute broccoli for asparagus if preferred. Adjust honey for a sweeter or less sweet glaze.
