An easy, one-pan meal featuring tender salmon and crispy potatoes in a sweet and savory honey garlic sauce.

Ingredients

Scale
  • For the Salmon and Potatoes:
  • 2 salmon fillets (6 oz each)
  • 1 lb baby gold potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • For the Honey Garlic Sauce:
  • 3 tbsp honey
  • 3 tbsp soy sauce
  • 2 tbsp lemon juice
  • 4 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss halved potatoes with 1 tbsp olive oil, oregano, salt, and pepper. Arrange on a baking sheet.
  3. Bake potatoes for 20 minutes.
  4. While potatoes bake, mix honey, soy sauce, lemon juice, garlic, and ginger in a bowl.
  5. Remove baking sheet. Push potatoes to the sides and place salmon fillets in the center.
  6. Brush salmon with the remaining 1 tbsp olive oil and season with salt and pepper.
  7. Pour the honey garlic sauce evenly over the salmon and potatoes.
  8. Return to oven and bake for 12-15 minutes, or until salmon is cooked through.
  9. Garnish with chopped parsley before serving.

Notes

For crispier potatoes, ensure they are in a single layer without overcrowding. You can substitute maple syrup for honey.
