Ingredients

Scale
  • For the Salmon:
  • 2 salmon fillets (6 oz each)
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • For the Maple Dijon Glaze:
  • 2 tbsp pure maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 clove garlic, minced
  • For the Oven-Roasted Carrots:
  • 4 medium carrots, peeled and cut into sticks
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • For the Herb-Infused Potatoes:
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Prepare the vegetables: In a large bowl, toss the carrot sticks with 1 tbsp olive oil, 1/4 tsp salt, and 1/8 tsp pepper. In another bowl, toss the halved baby potatoes with 2 tbsp olive oil, rosemary, thyme, garlic powder, 1/2 tsp salt, and 1/4 tsp pepper.
  3. Roast the vegetables: Spread the carrots and potatoes in a single layer on the prepared baking sheet. Roast for 20-25 minutes, until vegetables are tender and starting to brown.
  4. Make the glaze: While vegetables roast, whisk together the maple syrup, Dijon mustard, soy sauce, and minced garlic in a small bowl.
  5. Prepare the salmon: Pat salmon fillets dry and season both sides with 1/2 tsp salt and 1/4 tsp pepper.
  6. Cook the salmon: After vegetables have roasted for 20-25 minutes, push them to the sides of the pan. Add 1 tbsp olive oil to the center. Place salmon fillets skin-side down in the center. Brush the tops generously with the maple Dijon glaze.
  7. Finish cooking: Return the pan to the oven and bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork. Brush with remaining glaze halfway through cooking.
  8. Serve immediately with the roasted carrots and potatoes.

Notes

For crispier potatoes, parboil them for 5-7 minutes before tossing with oil and herbs. You can substitute honey for the maple syrup if needed.
