Mediterranean Ground Beef Stir Fry

A quick, flavorful Mediterranean-inspired stir fry with seasoned ground beef, bell peppers, tomatoes, and olives, served over rice or with pita.

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp chopped fresh parsley (for garnish)
  • Cooked rice or pita bread, for serving

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes. Season with salt, pepper, oregano, cumin, and smoked paprika.
  2. Add the diced onion and cook for 2-3 minutes until softened. Then add the minced garlic and cook for another minute until fragrant.
  3. Add the sliced bell peppers and cook for 3-4 minutes, stirring frequently, until they begin to soften but still have a bit of crunch.
  4. Stir in the cherry tomatoes and olives. Cook for another 2-3 minutes until the tomatoes start to release their juices and the olives are heated through.
  5. Remove from heat. Taste and adjust seasoning if needed.
  6. Serve hot over cooked rice or with warm pita bread. Garnish with fresh parsley.

Notes

This stir fry is versatile – feel free to add other Mediterranean favorites like artichoke hearts or crumbled feta cheese before serving.
