Pistachio Crusted Roasted Carrot Skewers with Whipped Feta and Cranberry Honey

Vibrant and elegant, these pistachio-crusted roasted carrot skewers are served with creamy whipped feta and a sweet-tart cranberry honey drizzle. A stunning vegetarian appetizer or side dish.

  • For the Roasted Carrots:
  • 12 medium heirloom or bunches carrots, peeled and tops trimmed
  • 2 tbsp olive oil
  • 1 tsp ground coriander
  • 1/2 tsp kosher salt
  • 1/2 cup shelled pistachios, finely chopped
  • 12 short skewers (or soaked wooden skewers)
  • For the Whipped Feta:
  • 8 oz feta cheese, crumbled
  • 1/4 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1/4 tsp black pepper
  • For the Cranberry Honey:
  • 1/2 cup dried cranberries
  • 1/3 cup honey
  • 2 tbsp water
  • 1 tsp apple cider vinegar

Instructions

  1. For the Roasted Carrots:
  2. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. In a large bowl, toss the carrots with olive oil, ground coriander, and kosher salt until well coated.
  4. Spread the carrots in a single layer on the prepared baking sheet. Roast for 20-25 minutes, until tender and lightly caramelized.
  5. Remove from oven and let cool slightly. Once cool enough to handle, thread each carrot onto a skewer.
  6. Place the finely chopped pistachios on a plate. Roll each skewered carrot in the pistachios to coat the outer surface.
  7. For the Whipped Feta:
  8. In a food processor, combine crumbled feta, Greek yogurt, olive oil, lemon juice, and black pepper. Process until smooth and creamy. Transfer to a serving bowl.
  9. For the Cranberry Honey:
  10. In a small saucepan, combine dried cranberries, honey, water, and apple cider vinegar. Bring to a gentle simmer over medium heat, stirring occasionally. Cook for 3-4 minutes until the cranberries soften and the mixture thickens slightly. Remove from heat.
  11. To serve, spread the whipped feta on a platter. Arrange the pistachio-crusted carrot skewers on top. Drizzle with the cranberry honey. Serve warm or at room temperature.

Notes

To make ahead, roast the carrots and prepare the whipped feta and cranberry honey separately. Assemble just before serving. You can also use rainbow carrots for a more colorful presentation.
