Roasted Carrots with Goat Cheese, Hot Honey & Crunchy Walnuts

  • 1 lb rainbow carrots, scrubbed and halved lengthwise
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • For the Topping:
  • 1/4 cup crumbled goat cheese
  • 2 tbsp hot honey
  • 1/4 cup chopped walnuts, toasted

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss carrots with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20-25 minutes until tender and caramelized.
  4. Transfer carrots to a serving platter.
  5. Top with crumbled goat cheese, drizzle with hot honey, and sprinkle with toasted walnuts.
  6. Serve immediately.

Notes

For a milder flavor, use regular honey. Walnuts can be toasted in a dry skillet over medium heat for 3-5 minutes until fragrant.
