Roasted Pears with Whipped Feta, Hot Honey & Crunchy Walnuts

  • For the Roasted Pears:
  • 4 firm-ripe Bosc or Anjou pears, halved and cored
  • 2 tbsp unsalted butter, melted
  • 1 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • For the Whipped Feta:
  • 4 oz feta cheese, crumbled
  • 2 oz cream cheese, softened
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp black pepper
  • For the Hot Honey:
  • 1/4 cup honey
  • 1/2 tsp red pepper flakes
  • For Serving:
  • 1/2 cup walnuts, toasted and roughly chopped
  • Fresh thyme or rosemary for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the pears: Halve and core the pears. Place them cut-side up on the prepared baking sheet.
  3. Make the glaze: In a small bowl, mix the melted butter, brown sugar, and cinnamon. Brush this mixture over the cut sides of the pears.
  4. Roast the pears: Roast in the preheated oven for 20-25 minutes, or until the pears are tender and caramelized.
  5. Make the whipped feta: While the pears roast, add the feta, cream cheese, olive oil, lemon juice, and black pepper to a food processor. Blend until smooth and creamy, about 1-2 minutes. Set aside.
  6. Make the hot honey: In a small saucepan, gently warm the honey over low heat. Stir in the red pepper flakes and let it infuse for 5-10 minutes off the heat.
  7. Toast the walnuts: In a dry skillet over medium heat, toast the walnuts for 3-5 minutes, stirring frequently, until fragrant. Let cool, then chop roughly.
  8. Assemble: Spread a layer of whipped feta on a serving platter. Arrange the roasted pears on top. Drizzle generously with the hot honey. Sprinkle with the toasted walnuts and garnish with fresh herbs if using. Serve immediately.

Notes

Use firm pears like Bosc or Anjou so they hold their shape while roasting. The hot honey can be made ahead and stored at room temperature. For a nut-free version, substitute toasted pumpkin seeds.
