Roasted Sweet Potato Rounds with Whipped Feta, Hot Honey & Pistachios

These roasted sweet potato rounds are topped with creamy whipped feta, a drizzle of spicy hot honey, and crunchy pistachios for a perfect balance of sweet, savory, and spicy.

  • For the Sweet Potato Rounds:
  • 2 large sweet potatoes, cut into 1/2-inch thick rounds
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • For the Whipped Feta:
  • 4 oz feta cheese, crumbled
  • 2 oz cream cheese, softened
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • For Assembly:
  • 2 tbsp hot honey
  • 1/4 cup shelled pistachios, roughly chopped
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Place sweet potato rounds on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly, then arrange in a single layer.
  3. Roast for 20-25 minutes, flipping halfway through, until tender and golden brown.
  4. While sweet potatoes roast, prepare the whipped feta: In a food processor or blender, combine feta, cream cheese, olive oil, lemon juice, and garlic. Blend until smooth and creamy, scraping down sides as needed.
  5. Spread or dollop the whipped feta onto the roasted sweet potato rounds.
  6. Drizzle with hot honey and sprinkle with chopped pistachios. Garnish with fresh herbs if desired. Serve warm.

Notes

For a lighter whipped feta, you can use Greek yogurt instead of cream cheese. Adjust the amount of hot honey to your preferred spice level. Sweet potatoes can be sliced into coins or wedges based on preference.
