Roasted Tomato Caprese Towers

Elegant appetizer featuring roasted tomatoes layered with fresh mozzarella and basil, drizzled with balsamic glaze.

  • For the Roasted Tomatoes
  • 45 large tomatoes, sliced into thick rounds
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp dried oregano
  • For the Towers
  • 8 oz fresh mozzarella, sliced into rounds
  • Fresh basil leaves
  • Balsamic glaze, for drizzling
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange tomato slices on a baking sheet lined with parchment paper.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, and dried oregano. Brush mixture over tomato slices.
  4. Roast tomatoes for 15–20 minutes until slightly caramelized but still holding shape. Let cool slightly.
  5. On a serving plate or individual plates, layer a roasted tomato slice, a mozzarella slice, and a basil leaf. Repeat to form towers of 2–3 layers.
  6. Finish with a basil leaf on top and drizzle with balsamic glaze. Season with salt and pepper to taste.
  7. Serve immediately or at room temperature.

Notes

You can use a store-bought balsamic glaze or reduce 1/2 cup balsamic vinegar with 1 tbsp honey until syrupy.
