Sticky Honey Orange Salmon with Roasted Veggies & Golden Potatoes

This sticky honey orange salmon is a delicious and easy weeknight meal. The salmon is baked with a sweet and tangy honey orange glaze and served with roasted vegetables and golden potatoes for a complete and healthy dinner.

  • For the Salmon:
  • 4 salmon fillets (6 oz each)
  • 1/4 cup wildflower honey
  • 1/4 cup fresh orange juice
  • 1 tbsp orange zest
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • For the Roasted Veggies & Potatoes:
  • 1 lb golden potatoes, cut into 1-inch cubes
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a small bowl, whisk together honey, orange juice, orange zest, soy sauce, garlic, ginger, and 1 tbsp olive oil. Set aside.
  3. Place salmon fillets on one side of the prepared baking sheet. Season with salt and pepper. Pour half of the honey orange glaze over the salmon, reserving the rest for later.
  4. In a large bowl, toss potatoes, broccoli, bell peppers, and onion with 2 tbsp olive oil, thyme, paprika, salt, and pepper until evenly coated.
  5. Spread the vegetables on the other side of the baking sheet in a single layer.
  6. Roast in the preheated oven for 20-25 minutes, or until salmon is cooked through and vegetables are tender and golden. Brush salmon with the reserved glaze during the last 5 minutes of cooking.
  7. Serve salmon immediately with the roasted vegetables and potatoes.

Notes

For a crispier salmon skin, you can sear the salmon skin-side down in a hot skillet for 2-3 minutes before placing it on the baking sheet. Adjust vegetables based on what you have on hand.
